I assume it means that some of the back turned combos, like many in Tekken, can be partially escaped by doing an attack from back turned or even crouching etc. Or maybe he is referring the the multiple ways to escape that throw.
You can escape it by holding f or d to either turn around or fall. A lot of ppl are too busy trying to break the throw to hold a direction till they are used to seeing it.

shouldn't you also be able to hold D to fall from the step over throw?

I don't think Bryan's 332 is guaranteed, should be duckable backturned
Pretty sure Bryan's 332 is guaranteed from the fact that the combo drains away red life.
